Ingredients

The Protein Source

  • Seitan chunks (made with 40g vital wheat gluten powder)

Homemade BBQ Sauce

  • Sieved tomato sauce (120g, canned)
  • Soy sauce or Liquid Aminos (2 tbsp)
  • Paprika powder (2-4 tbsp)
  • Apple cider vinegar (2 tbsp)
  • Sugar or zero-calorie sweetener (to taste)
  • Black pepper

Aromatics & Veggies

  • Red onions (sliced)
  • Orange carrots (chopped)
  • Dried seasonings (to taste)

Fresh Toppings

Equipment

  • Small pot
  • Air fryer
  • Chef knife & chopping board

Simple Method

  1. 1Combine your 120g of sieved tomato sauce into a small pot with paprika powder, vinegar, soy sauce, and sugar, then simmer for a few minutes and taste to check if it's smoky enough.
  2. 2Add to your plate with the air-fried seitan, fresh sprouts, chopped carrots, and 1/3 of your warm BBQ sauce, then season everything with dried seasonings and top with cilantro.

Detailed Method

  1. 1Use your chopping board to finely slice the red onions, chop the orange carrots into small pieces, and chop your fresh cilantro.
  2. 2Combine the 120g of sieved tomato sauce directly into your small pot along with the paprika powder, apple cider vinegar, soy sauce, and sugar.
  3. 3Place the small pot over medium-low heat and let it simmer for a few minutes. Give it a quick taste check to ensure the flavor profile is rich, balanced, and smoky enough for your liking.
  4. 4Air-fry the seitan on a medium heat setting until they turn golden-brown and form a slightly crispy outer edge.
  5. 5Transfer exactly 1/3 of your warm, simmered BBQ sauce from the small pot directly onto your serving plate or meal container.
  6. 6Add the air-fried seitan, fresh chopped carrots, and a healthy handful of mixed sprouts to your plate with the sauce.
  7. 7Generously season the entire dish with your favorite dried seasonings, give it a quick toss to coat, and top with the chopped cilantro.

Tips

  • When you taste the sauce during its brief simmer, you can tweak the paprika powder or sugar up or down slightly to perfectly hit your desired smoky-sweet threshold.
  • Keeping the chopped carrots raw adds a beautiful, distinct crunch that contrasts perfectly against the warm, chewy texture of the air-fried seitan.

Storage

Keep the components sealed separately or together for up to 3 days in the fridge. Best reheated in an air-fryer.
