Equipment
- High-power blender
- Air fryer
- Small pot
- Chef knife & chopping board
Simple Method
- 1Blend your soaked cashews, silken tofu, orange juice, tomato paste, vinegar, citrus juice, pink salt, and spices into a completely uniform cream baseline inside a small pot.
- 2Finely dice your raw onions, carrots, and daikon radish, then mix them with the sprouts.
- 3Transfer 1/3 of the chunky sauce into your meal container along with the batch-airfried seitan, then toss everything together and top with the fresh sprouts and vegetable mix.
Detailed Method
- 1Optional: Soak your raw cashews for a few hours to soften their outer fats, then drain them completely.
- 2In a high-speed blender, combine the softened cashews, 100g of silken tofu, the freshly squeezed juice of 1 orange, 2 tablespoons of tomato paste, apple cider vinegar, pickle brine, fresh lime or lemon juice, pink salt, and zero-calorie sweetener.
- 3Blend on high for 60-90 seconds until a completely uniform, rich, tangy Thousand Island cream forms, then pour it directly into your small pot.
- 4Use your chopping board to finely dice or slice your raw red onions, carrots, capsicum, and white radish into micro-sized crunch pieces.
- 5Mix the sliced or diced raw vegetables directly with the sprouts.
- 6Load your pre-cooked seitan chunks into the air fryer basket and warm them on a medium heat setting until the outside edges get a light, crispy skin.
- 7Transfer exactly 1/3 of the Thousand Island dressing into your meal container.
- 8Add the warm air-fried seitan chunks directly into the container with the sauce, toss everything thoroughly to coat, and top the dish with a fresh handful of the mixed sprouts and raw vegetables.
Tips
- The fresh orange juice adds a beautiful natural sweetness and subtle brightness that balances out the sharp acidity of the vinegar and pickle brine.
- Make an extra batch of this dressing to keep on hand in the fridge—the crunch of the raw diced veggies holds up wonderfully as a high-protein dipping sauce.
Storage
